Ideally, my favorite time to enjoy this salsa is about 2 hours after it has been prepared, I like it cold and giving it a little bit of time to marinate enhances the flavors. After 24 hours things start to get a little mushy and the salsa won’t taste as fresh. Because of the lime juice, the avocado will keep fine and not turn brown as long as you keep it refrigerated in an air tight container. Make the salsa by dicing peaches (no need to peel) and adding the remaining salsa ingredients. Bake until warm pink inside do not overcook.
